This may seem like a strange topic for zen habits! but I do believe that sharing a family meal together is a very important ritual. It incorporates healthfulness, love, organizaton, order, and a more civilized way of life.
I have been trying to come up with some easy dinner menus. We are mostly vegetarian, and I'm trying to create menus using foods that we generally have on hand, are inexpensive, child friendly, and easy to prepare. I'd love to have more suggestions! Here is what I have come up with so far (My husband and I usually have salad with meals, but I do have an 8yo...)
Dinner menus
(Dessert can be either: canned, frozen, or fresh fruit, custard/flan, smoothies, or low fat ice cream.)
Vegetarian chili
Brown rice
Chard or spinach
Corn - canned or on the cob
Dessert
Vegetarian burger on whole grain bread with lettuce and tomato
Cooked squash or carrots
Potatoes, mashed or baked
Dessert
Cheese enchiladas with brown rice
Black beans
Broccoli or cauliflower
Dessert
Macaroni and cheese
Creamed spinach
Carrot and celery sticks with ranch dressing
Dessert
Vegetable/tofu/rice stir-fry
Miso soup

Veggie dogs (on whole grain rolls)
Vegetarian baked beans
Potato salad (no mayo)

Cheese and mushroom omelet
Broccoli or cauliflower
Hash brown potatoes

Mark Bittman's book How to Cook Everything is one of my favorites. We have a few family favorites from that book. It is well worn and falling apart. The list of 101 Simple Meals will add to the collection of recipes, thanks Fuji.
