The majority of my life has consisted of playing very high level ice hockey. All throughout my childhood I played for various travel teams, spent five years playing AAA, three years playing high school, and now three years collegiate. However, my career has reached its end and I am at a loss as to what to do.
I ran cross country one year in high school basically on a whim and have played a few other sports recreationally (lacrosse, golf, football). I think I want to start doing triathlons...but at this point I don't really know. I don't even know what my new fitness goals are. All I know is that I'm used to either a.) preparing for hockey season or b.) being in hockey season.
How do I go about finding a new fitness "passion?" Does anybody else do triathlons? Has anybody else had to find a new sport or exercise of choice because of injury or some other reason?

Start playing different sports until you find something that clicks with you. Go skiing, play tennis, join a volleyball league, play softball. Run triathlons if you want. Give it all a shot, then rule out those that don't tickle your fancy.
It would help to figure out what your fitness goals are though. I wrote a post awhile back about developing base fitness. As a hockey player, you probably have a pretty good base across all ten physical skills discussed in that post, but it's a good starting point for shoring up weaknesses. From there, you get to specialize into your chosen field(s) depending on how highly elite you want to be.
